Cilantro Coconut Rice

     I have tried different incarnations of coconut rice but this is by far the best I have tasted.  This is my go to recipe when we have an abundance of cilantro that needs to be used up.  My son, Elijah, loves this because it is both sweet and savory.

Strawberry and Arugula Salad with Hazelnut Dressing


Peppery arugula, sweet, ripe strawberries, and buttery hazelnuts create layers of contrasting flavor in this simple salad.  We have been eating a lot of organic strawberries lately which is what inspired this recipe.

In France, this soup would be prepared with a baking pumpkin. A mixture of butternut and acorn squashes mimics the French pumpkin's exceptional taste and texture. Pour a lightly chilled rosé with this colorful first course. Either a Rhône Tavel or a Provençal Bandol would be lovely.
